Kicken' Craisin Cookies ~ 

This recipe was the featured  in the Sadie Hoffmiller book Key Lime Pie. It's a different take on a standard oatmeal raisin cookie and one of my favorites.

 (Ingredients:
1 cup butter
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla
2 cups all purpose flour
2 1/2 cups quick oats
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp ground cinnamon
pinch of cayenne pepper
1 1/2 cup dried cranberries (Craisins are best)
1/2 cup white chocolate chips (optional)
1/2 cup chopped walnuts or pecans (optional)

1) Preheat oven to 400 degrees

2) Cream butter and sugars. Add eggs and vanilla; mix until well combined. 
​Add dry ingredients and mix well. Add dried cranberries, white chocolate chips, and walnuts.

3) Drop by tablespoons or use a 1-inch scoop to make dough balls and place on an un-greased cookie sheet about 2 inches apart. Bake 6 - 9 minutes or until JUST browned - do not over-bake. 

4) Allow to cool on pan 2 minutes before moving to cooling rack. Cookies should be crisp on the outside and chewy in the middle.
